Bucatini alla Salsiccia

(Pasta with Sausages)

It’s mid-week and you want to make something quick but without too much preparation. What do you do?

Well, I came across this recipe long time ago from a book of 5000 Italian recipes. The instructions were minimal and the ingredients were minimal.

I thought I’d give it a try.

The original recipe used only crushed tomatoes, sausages and pasta.

I improved it a little to give it a bit more “rustic” taste by adding Nduja.

But, it’s super easy to make and goes very well with bread rolls.

In fact, you can just leave out the pasta and use bread to really soak up the sauce, or make a sausage sandwich!

Makes 4


Ingredients:

  • 400g of bucatini
  • 600g of peeled tomatoes, crushed
  • 150g of Nduja
  • 350g of fresh Italian sausage, casing removed and chopped
  • 10 ml of olive oil
  • grated smoked cheddar, to taste
  • salt and freshly ground pepper
Instructions:

  1. In a pan, heat the oil. Add the sausage and let it brown, then add the water, tomatoes and nduja.
  2. Add salt and pepper to taste, cover and continue in cooking.
  3. Meanwhile, in a large pan with boiling water, add salt and cook bucatini until 2 minutes before time specified on packet.
  4. Remove pasta from pan and add to sausage sauce to cook for about 1 minute.
  5. Sprinkle with grated cheddar cheese and serve.
  6. Don’t forget the bread rolls!
