Pasta Gamberi e Guanciale

(Pasta with Pork Cheeks and Prawns)

With this dish, you get basically a Pasta Amatriciana with prawns and the stracciatella cheese to make it a creamy sauce.
I went a little overboard with the cheese but surprisingly, it turned out really well!

Bucatini alla Carbonara

(Spaghetti with Eggs, Pork Cheeks and Pecorino Romano)

One of Rome's most famous dishes: Spaghetti Carbonara. Actually in Rome, they would use Bucatini.
This is one of my most favourite recipes: authentic and simple! (Hint: real carbonara does not use cream!)

Another classic Roman dish - Spaghetti All’Amatriciana. Made with 3 ingredients: spaghetti, guanciale (pork cheek) and tomatoes)…plus pecorino sprinkled at the end.
Simple yet delicious!
