Quick Meal: Pasta con la Polpetta
(Pasta with Re-provisioned Rissoles)
This is an example of how one can cook a delicious meal without too much preparation:
1) Make a pasta Napoletana.
2) Add your favourite meat or vegetable. In this case, I added meatballs.
That’s it. Really.
Just use a bit of imagination.

The meatballs:
- 500g of your favourite pasta

- 400g of diced tomatoes
- 700g of Tomato Passata
- 2-3 cloves garlic, crushed
- Chilli flakes to taste
- 12 brown large anchovies (replaces the salt)
- freshly ground pepper to taste
- extra virgin olive oil - enough to cover base of pan generously
- fresh basil
- 50ml of red wine
- Parmigiano-Reggiano
The meatballs:
- 10 beef rissoles (about 950g)
I can cook pasta, I didn’t say I can make meatballs. Since the local butcher sells some beef rissoles which are very nice, so I decided to get them and “re-provision” them. I bought 10 big balls of rissoles and cut each into half and re-balled them to become 20 big meat balls.
